When making most soups, add a mirepoix to the extra virgin olive oil already in the soup pot. Mirepoix is a French term meaning a mixture of sauteed vegetables. In this case, I am talking about onions, carrots and celery. These tend to be the beginning of most soups which give the soup incredible flavor. The secret to a more flavorful soup is when you add the mirepoix to the extra virgin olive oil over medium high heat, stir the vegetables until they are fully coated with oil. Add a few pinches of salt which will enhance the flavor of the vegetables and help release the delicious juices. Omit the salt if you are on a low sodium diet.
Turn the heat to simmer. Cover the pot and let the vegetables sweat for at least 8 minutes. Sweating in this case means you are allowing the juices from the vegetables to mix with the oil and this creates more flavor.
Illness cannot live in a body that is alkaline. When we were born, our bodies had an acid/alkaline balance. Acidity comes from the environment, poor diet, poor sleeping habits and a negative outlook. Over the years the shift from balance to a predominance of acidity in our body plays havoc on our immune system. Green juices and changing from an unhealthy lifestyle can help to correct this imbalance. Here is a great recipe for an organic green drink that is totally alkaline:
1 - handful of sunflower sprouts
1 - handful of pea sprouts
3 ribs celery
1/2 large cucumber
4 leaves of kale
1 - 1" piece of fresh ginger
1 - 1" piece of fresh turmeric
1 - granny smith apple
1 - small lemon
