So many of my clients, over the years, have stopped eating fried foods.  This is good.  If you fry foods with oils that are high in trans fats you may be playing Russian roulette with the health of your heart.  You develop also a high risk of obesity and diabetes.  A client of mine, several years ago, turned me onto a wonderful baked recipe called FAKE FRIED CHICKEN.  It is moist and tender and it has that crunch that you love from fried foods.  I think that if you love fried chicken, then you'd better take a serious look at this recipe.  The Colonel is probably rolling over in his grave knowing that you can have delicious fried chicken without all of that oil.   
                   FAKE FRIED CHICKEN

2 bone-in with skin Chicken Thighs
2 bone-in with skin Drumsticks
2 bone-in with skin half Breasts
3 cups Gluten Free Flour
3 cups Gluten Free Panko Bread Crumbs
2 Eggs
1 teaspoon Garlic Powder
1 teaspoon Italian Seasoning
1 teaspoon Smoked Paprika
1 teaspoon Salt
1/2 teaspoon Pepper
Coconut Oil Spray (or Extra Virgin Olive Oil Spray)

1)  Preheat the oven to 400 degrees on convection, if you have it, or regular bake mode and place a sheet pan in the oven to preheat it.
2)  Set up a dredging station with Flour in one bowl, the 2 beaten Eggs in another and finally the Panko Bread Crumbs in another.  Mix all of the seasonings together in a separate bowl.  Season each of the bowls of Flour, Eggs and Panko with 1/3 of the seasoning mixture.  
3)  Dredge the chicken first starting with the Flour.  Make sure it is completely covered and shake off any excess.  Next dip the chicken parts in Egg.  Finally roll the Chicken parts in the Panko making sure again it is completely covered with bread crumbs.
4)  Take out the hot sheet pan from the oven and place the chicken on it.  Spray the sheet pan generously and then each of the chicken parts with the Coconut Oil (both sides of the chicken).  Bake the Fake Fried Chicken skin side up in the center of the oven for 20-30 minutes.  The internal temperature should be 170 degrees.  Crunch away on this incredible recipe.  Enjoy!!!
