Holistic Chef Eddie's Tip of the Day #29

10/1/2019

,I know in Tip #16 I told all of you how to make MARINARA SAUCE by making Shakshuka (Israeli breakfast which is Sunny Side Up Eggs in a Tomato Sauce).  I'm just afraid people won't refer back to it in order to make my Ever So FABULOUS Marinara Sauce.  I am forced, by the forces that rule, to display this important recipe by itself. It's so important because it is one that can create so many other recipes.  You always need a great tomato sauce in your repertoire for some pasta dishes and various casseroles.  This Marinara Sauce is friendly for vegans, vegetarians, diabetics, low salt diets, cancer, Kosher, Gluten Free and Keto.  I love the idea that it can please just about everyone.  Blessings to all of you.  Keep eating wonderful nutritious food that nurtures your body.
   CHEF EDDIE'S FAMOUS MARINARA1 -  1 - 32 oz. can Crushed Fire Roasted Tomatoes
1 - small can of Tomato Paste
2 Tablespoons Extra Virgin Olive Oil
3 cloves minced Garlic
1 medium sized Onion,  chopped fine
1 - stalk Celery, chopped fine
1/2  Green Pepper, chopped fine
1 - 8 oz. package of White or Baby Bella Mushrooms, sliced
1/4 cup Cabernet Red Wine
2 Tablespoons Braggs Liquid Amino
A sprinkle of Red Pepper Flakes (for some umpfff)
1 teaspoon each dried or 1 1/2 teaspoons fresh Basil, Oregano and Thyme, chopped
1 teaspoon Monkfruit (or any sweetener)
1 large Bay Leaf

1) Over medium high heat, drizzle the Olive Oil in a medium sized sauce pan, add onions, garlic, celery, green pepper and mushrooms.  Stir until all veggies are coated with oil, turn down the heat to simmer and cover to cook for 10 minutes allowing the contents to sweat out their natural juices that mix with the oil.

2) Add the Fire Roasted Crushed Tomatoes, Braggs Liquid Aminos, Red Wine, Monkfruit sweetener (or 1 packet Stevia) and Tomato Paste.  Stir over medium high heat until combined and bubbling.  Add red pepper flakes, thyme, oregano, basil and bay leaves.  Stir.  Cook covered over a simmer for 1 - 3 hours.  I cook mine longer than 1 hour because it just becomes a richer sauce with all ingredients just combining longer.
