I am so excited to share this recipe with all of you. My Grandmother loved making Chicken Soup and I loved eating it. She was from Eastern Europe and brought some incredible recipes to the United States when she emigrated. The recipe use to be my secret but now I am so open to sharing. This recipe is perfect for Keto and Paleo and it's definitely Jewish penicillin and will make you feel good all over.
Chef Eddie's Chicken Soup Pour 2 Tablespoons of Extra Virgin Olive Oil into a good size soup pot over medium high heat. Add 1 medium chopped Sweet Onion, 3 ribs of Celery sliced into 1/2" pieces, 3 Carrots sliced 1/4", a generous teaspoon of chopped fresh Thyme and 2 Bay Leaves. Mix thoroughly so all veggies are coated with oil and then turn heat down to simmer. Cover and let the veggies sweat (release juices and mix with oil) for at least 5-8 minutes. Add 3 cloves of minced Garlic and stir into mixture for 30 seconds, not allowing the garlic to brown. Turn the heat up to high and add 4 cups of Chicken Broth, 1/2 cup dry White Wine, 2-3 Tablespoons of Braggs Liquid Aminos (not my Grandmother's ingredient but mine), 1 teaspoon Ground Cumin, Salt and Pepper to taste and 8 skinless boneless Chicken Thighs or 4 skinless boneless Breasts of Chicken. You can mix Thighs with Breast. Cook for at least one hour. The chicken should be soft enough to shred. Remove chicken and shred with a fork on a cutting board. Add chicken back into pot. Adjust salt and pepper to your taste. OMG this will cure all ills. Haha don't quote me on this but it is delicioso. Enjoy!!!
