HOLISTIC CHEF EDDIE'S TIP OF THE DAY #44

10/16/2019

Today I was going to share a fish dish, but I work for this family every Wednesday and was presented this recipe to prepare, BLACK BEAN PLANT-BASED BURGERS.  I really want to represent everyone's lifestyle equally, however, when I made these Burgers today they were so delicious I couldn't pass up the opportunity to feature them.  They are Vegan and easy to make.  I wound up making a dozen for the lady of the house and sneaked one for myself.  I thought I had a great Burger in my repertoire but this one is better.  Yes, better.  It pains me to admit it.  There are 4 different whole grains, veggies and spices in this recipe.  I don't usually feature someone else's work since I have so many of my own that I've developed over 40 years. I did change a few things  to fit my own style. The person who developed this recipe is Yuki Matsumura from Yukithen.  I hope you like it as much if not more than I do.  Trust me you better double the recipe and freeze them.  You won't be sorry you did.
BLACK BEAN PLANT-BASED BURGERS

1/4 cup Wild Rice
1/3 cup Brown Rice
1/3 cup Quinoa
1/2 cup Gluten Free Rolled Oats
1 medium Sweet Onion, chopped well
1 cup Baby Bella or White Mushrooms coarsely chopped
3 - 4 cloves Garlic, minced
3 Tablespoons Braggs Liquid Amino
1 pinch of Salt
1 teaspoon Black Pepper
3 teaspoons ground Cumin
1 teaspoon ground Coriander
1/2 - 1 teaspoon Cayenne Pepper (optional) I love it spicy
3 cups drained Black Beans

1)  In 3 different small saucepans, cook the Wild Rice, Brown Rice and Quinoa.  After cooking combine in a medium sized bowl.
2)  Mash the drained Black Beans in another bowl and add to the grains.
3)  In a small skillet over medium heat,  cook the Sweet Onions in 1 Tablespoon Extra Virgin Olive Oil.  When they start to brown (5 minutes) add the Garlic and cook for 1 minute.  Add the Mushrooms and cook until soft.  Put in the bowl.
4)  Season the mixture with Braggs Liquid Amino, the pinch of Salt, Pepper, Cumin, Coriander and Cayenne Pepper (optional).  Finally add the Oats.
5)  Form the Burgers into 4 inch diameter and 1 inch thick.  If the Burgers are too wet, add more Oats to make them hold together
6)  Place them on a non-stick sheet pan in a 375 degree oven for 30 minutes until brown on both sides.  You can also grill these Burgers which gives it a taste out of this world.  Enjoy!!!
