I just bought some Chicken Bone Broth with Lemongrass and Ginger at Whole Foods Market.  The company, Kettle & Fire makes the broth in different flavors.  I just heated it up to go with dinner and added a bit of Braggs Liquid Amino in it and I'm sold.  It was so delicious.  The other two flavors were Mushroom Chicken and Turmeric Ginger,  Today I'm featuring MUSHROOM BEAN AND BARLEY SOUP WITH MUSHROOM CHICKEN BONE BROTH.  You can make it Vegan or Vegetarian if you wish using Vegetable Broth.  Bone Broth has so many nutrients to include iron, protein, Vitamins A and K, and so important in supporting the connective tissues of the body.   The taste has a richer flavor than regular chicken broth.  Try it.  Let me know what you think.  The temperature tomorrow night is going down in the upper 40's and only mid 60's on Tuesday.  What better time for a hot bowl of soup. 

​     MUSHROOM BEAN AND BARLEY SOUP
  WITH MUSHROOM CHICKEN BONE BROTH


2 Tablespoons Extra Virgin Olive Oil
1 medium Sweet Onion, chopped
3 cloves Garlic, minced
1 teaspoon Fresh Thyme
1 Bay Leaf
3 ribs Celery, sliced 1/4 inch 
2 Carrots, sliced 1/4 inch
1 package White or Bella Mushrooms, sliced (4 oz.)
2 Tablespoons Braggs Liquid Amino
1/4 cup Chardonnay White Wine
4 cups Mushroom Chicken Bone Broth (or just Chicken Bone Broth, Chicken Broth or Vegetable Broth)
2 cans White Cannellini Beans
1/2 cup Barley

1)  In a large soup pot, add the Extra Virgin Olive Oil.  Then follow the oil with the chopped Carrots, Celery, Sweet Onion, Fresh Thyme and Bay Leaf.  Make sure all the ingredients are covered with oil.  Turn the heat down from medium high to simmer.  Cover and let the veggies sweat their juices and mix with the oil.
2)  Add the minced Garlic and stir into the mixture, cooking only one minute.  Add the Mushrooms, White Cannellini Beans and Barley.  Stir until combined.  
3)  Pour in the Mushroom Chicken Bone Broth, Braggs and White Wine.  Bring to a boil, then to a simmer and cook covered for 45 minutes until the Barley is soft.  Enjoy this rich, thick, flavorful soup on a cold day or any day. 

NOTE:  ​Vegan if you use Vegetable Broth
