Cauliflower seems to be the "in thing" for carb watchers.  Its uses are extensive.  My obsession with bread, pasta, grains and starchy vegetables has lead to a struggle over the years to stabilize my weight.  It can be challenging to replace one thing for another in your diet if you don't have something to fill in that gap.  Cauliflower is a good substitute.  You can turn cauliflower into bread, pizza crust, rice and chips, just to name a few.  Vegans can make buffalo "wings" out of cauliflower.  It's amazing.  One outcome in this substitution is that you are able to lose weight quickly.  Here is a favorite recipe of mine using riced cauliflower.  Any supermarket will have it in the produce section or you can also find it in the frozen section with the vegetables.  Experiment with it.  You've got nothing to lose except some pounds.

Cilantro Lime Cauliflower Rice

1)  Heat one Tablespoon of Extra Virgin Olive Oil in a large skillet.  Add 1/2 cup sweet onions, finely chopped and saute until the Onions are translucent and soft, about 5 minutes on medium heat.  Add 1 teaspoon of minced Garlic and cook it for 30 seconds before adding one small green minced Jalapeno Pepper (ribs and seeds removed).  This is optional if you like a little heat in your food.  Cook another minute stirring the whole time.
2)  Add 3 cups of cauliflower rice to the skillet and stir until everything is combined.  Stir in 2 Tablespoons of Vegetable Broth, 1/4 teaspoon Salt (or to taste) and the zest of 1/2 Lime.  
3)  Turn the heat to high and cook for a minute until some of the moisture in the cauliflower is drawn out.  Make sure the cauliflower is firm and soft, not mushy.  Lower the heat and add 1 Tablespoon of Lime Juice.  Mix well and adjust the salt.  Serve warm.  

NOTE:  Sometimes I substitute Braggs Liquid Amino for salt.  It gives the "rice" a wonderful flavor.
